Method for Phool Matthri 1. Add oil/ghee into the maida and knead with both hands to make the dough. The hardness must be similar to the dough made for puris. 2. Mix ajwain/kalonji into the dough and knead it to spread it uniformly 3. Add water to prepare the hardened dough 4. Break the dough into dough balls

5. Make a thin roti which is large in diameter and cut it into circles using a flat edged katori

6. Smear some water along the central line of the sections to prepare them for shaping 7. Now shape the round cut-outs into the Flowery shapes as shown in the picture.

a. You will have to use both your hands to get the proper shape. If you get an erratic shape by mistake, you can mix it back into the dough. Practice make the flowery shape a couples of times if required.

9. When ready, fry the pieces on low-medium flame as the rotis are thin in thickness
